Bar 27 is a new addition to our favorite bars in Metro Manila where you can watch Manila's spectacular sunset while unwinding to live acoustic music, and enjoying delicious cocktails and bar chows.

Located on the 27th floor of the luxurious Diamond Hotel in the Manila Bay Area, Bar 27 affords its guests with an unmatched panoramic view of Roxas Boulevard and of the Port of Manila. It opened last December 2016, making Bar 27 the newest penthouse bar in the whole bay area.

Bar 27 opens daily at 5:00pm so guests will never miss a sunset. For the best view of the city, make sure you seat next to the glass windows. If you have stayed at Diamond Hotel before, you will notice that Bar 27 has the same modern chic feel as the hotel's newly renovated Premier and Club rooms.

The bar's interior is filled with touches of violet, lavender, indigo and azure. The couches are also consistent with the stylish design of the rooms. Geometric patterns add a complementing modern feel to the contemporary furniture, lighting fixtures and accent pieces.

The magic only starts after sunset. Watch as the Manila skyline changes from warm orange and yellow, to burning red, shifting to hues of pink and lavender, until the whole bay area lights up against a backdrop of deep blue sky.

After the spectacle, it's time to enjoy the evening with cocktails expertly mixed by Bar 27's in-house bartenders. Watch them in action at the bar counter as they concoct well-balanced drinks or have them customize one for you. Don't forget to check-out the chandelier made of glass pieces shaped into leaves.

Meet Cholo, one of the bartenders at Bar 27. During our visit, he demonstrated how they make a Boulevardier cocktail. Called Smoking Gun at Bar 27, the drink is a mixture of Bourbon whiskey, Campari and Sweet Vermouth. The mixture is then placed in a flask and is then filled with an aromatic smoke that infuses into the drink.

I also had Cholo make Cool as a Cucumber, which is their version of mojito. This drink includes rum, lime juice, simple syrup, mint leaves, and bits of cucumber which added a more refreshing taste to the drink.

Another drink that I tried was the Partial Eclipse, a ginger infused cocktail. The drink had vodka as its base which is then mixed with ginger syrup, lime juice and soda, and finally served in a copper mug garnished with a slice of lime.

What I like about Bar 27 is that all cocktails have the same price of P420.00 nett (~US$8.40). This makes it easier for guests to choose a drink. All cocktails also have a mocktail version priced at P380.00 nett (~US$7.60). Selected cocktails are also served by the pitcher at P1,500.00 nett (~US$30.00) and can be shared by four persons.

We also tried a variety of their bar chows and let me tell you about my top three favorites. Since we were a big group, we certainly enjoyed the Chef’s Tasting - Jamon Experience (P895.00 / ~US$18.00) which is a generous platter of Iberico Bellota, San Daniele Parma Ham, Serrano Ham, dried fruits and assorted nuts.

We got an insider tip about a secret dish that goes well with any cocktail. The Crispy Anchovies were very tender and coated with a crunchy batter, resulting to an addicting contrast of textures. It was so delicious we wanted to order rice with it!

Lastly, the Gambas al Ajillo (P725.00 / ~US$14.50) was another favorite in my group. The plump prawns were perfectly grilled and gloriously flavored with garlic, topped with chili and drizzled with olive oil. The dish is served with garlic bread on the side.

Live music will entertain guests at Bar 27 throughout the evening. Two groups of performers will set the mood starting with acoustic rendition of local and international songs, followed by the upbeat tunes of jazz, latin, bossa nova and salsa.
