Cucina's New Signature Dishes by Marco Polo Ortigas Manila's New Executive Chef, Chef Alisdair Bletcher



Marco Polo Ortigas Manila (Philippines) recently rolled-out three New Signature Dishes for Cucina, its all-day buffet and ala carte dining restaurant. These new dishes provide a preview of what to expect from Marco Polo Ortigas Manila's newly appointed Executive Chef, Chef Alisdair Bletcher.



A native of Scotland, Chef Alisdair is not new in the Philippines. He used to be the Executive Chef of InterContinental Manila and Holiday Inn & Suites Makati. In 2015, he moved to Maldives where he worked as Executive Chef for two years. Now he is back here in Philippines to join Marco Polo Ortigas Manila.

Surf and Turf Blanket

As the new Executive Chef of the hotel, his first task is to introduce new signature dishes that will give a fresh and new identity to Cucina. The first one is the Surf and Turf Blanket which combines salmon and minced beef wrapped and baked in a puff pastry shell.

Boneless Pork Knuckle Stuffed with Foie Gras and Served with Pineapple Salsa

The Boneless Pork Knuckle Stuffed with Foie Gras replaces the Cochinillo and the Porchetta. The dish is already sliced and is served with potato wedges. The last one was the Braised Beef Roulade Stuffed with Cream Cheese, Shrimp, Fish, and Shellfish Meat.

Yesterday, I was able to sample these three new signature dishes, thanks to the invitation from Marco Polo Ortigas Manila. The boneless pork knuckle was surprisingly tender while the skin was crispy. The foie gras filling has a very delicate taste and not too overpowering.

New Signature Dishes

The braised beef roulade was also very tender. The sauce of the dish had a well balanced mix of flavor of beef and seafood, indeed a must try! But my top favorite was the surf and turf blanket. I am a fan of salmon and I love the sweet and creamy taste of the salmon but the minced beef gave this dish a different dimension. It's like eating shepherd's pie mixed with creamy salmon.

Best Paella in Town

I was also glad that Cucina kept the best paella in town in its buffet menu. I also noticed that the Japanese station now has a wider selection of dishes. The Indian station also doesn't fail to satisfy me.
