The New Normal of Breakfast Buffet at Hilton Manila

New Normal Update, Breakfast Buffet



Breakfast is one of the things we always look forward to whenever we stay at Hilton Manila. We did a weekend staycation at Hilton Manila in November 2020 when it reopened as a Staycation Hotel. Part of this new normal staycation experience was the new normal breakfast buffet at Kusina Sea Kitchens.



Safe physical distancing measures were implemented inside the restaurant such as well-spaced dining tables and chairs and plexiglass barriers installed on tabletops. Some tables are arranged to prevent face-to-face seating. Physical distancing floor markings and directional arrows were also installed around the buffet stations. A copy of the buffet map is placed on the tables.



Guests are also required to wear their facemasks and face shields when entering the restaurant and when taking food from the buffet stations. Guests are only allowed to remove their facemasks when seated and while eating.



Serviced Buffet is being observed here at Kusina Sea Kitchens. This means that the kitchen staff will be the ones to serve dishes on your plate. Guests, on the other hand, are no longer allowed to handle the serving spoons. Cold dishes are portioned and placed in a plastic container.



Breakfast Schedule
Breakfast at Kusina Sea Kitchen is available from 7:00am to 10:00am daily. There are two seating schedules to conrol the number of guests dining at the same time and to better implement safe physical distancing. Guests have to choose their preferred schedule upon check-in:

  • First Seating: 7:00am to 8:30am
  • Second Seating: 8:30am to 10:00pm

Should your plans change, you can call guest service to change your breakfast schedule. I recommend having your breakfast during first seating as the restaurant tends to get busier during second seating.



What We Tried


We started our breakfast with a variety of French pastries. We had the Strawberry Danish and the Blueberry Danish, as well as the Pain au Chocolat which we paired with cappuccino.



Something we don't usually eat for breakfast is French Toast. We didn't regret ordering it. We like the bread they used and the syrup was not overly sweet. Most of all, the sweet mango topping was absolutely divine.



From the Chinese Station, we got a bowl of Congee topped with pork floss and chopped scallions. I usually add century egg as well to my congee. Unfortunately, there was no century egg available during our visit. We also got Shumai from the Chinese Station. 



We skipped the Filipino Station this time and went for an English Breakfast. We got the Chicken Sausage, Scrambled Egg, Baked Beans, and Hash Browns.



As always, we ended our breakfast with Cut Fruits. Unfortunately, local delicacies such as Biko, Puto, Kutsinta, and Sapin-Sapin were no longer offered in the buffet.

The hotel currently caters only to local residents while international tourists are not yet allowed to enter the Philippines. Most of the dishes served are Western and Filipino dishes. There are a few Chinese and Japanese dishes as well. Here are some of the breakfast items served on the buffet during my visit. Please note that options will differ every day.



Artisan Bread - Multi-Grain Rolls, Sourdough Rolls, Soft Rolls, Sourdough Bread, Banana Bread, Wheat Bread, White Bread, Pan de Sal



Pastries - Croissant, Pain au Chocolat, Strawberry Danish, Blueberry Danish, Muffins, Doughnuts, Ensaymada



Carving Section - Farmer's Ham, Pork Sausages, Chicken Sausages, Hungarian Sausage, Potato Wedges

Porridge - Congee, Arroz Caldo, Oatmeal



Egg Station - Poached Egg, Over-Easy Egg, Scrambled Egg, Fried Egg, Sunny-Side Up Egg, Omelet



Dim Sum - Shumai, Vegetable Dumpling, Steamed Pork Buns



Western Section - Crispy Bacon, Soft Bacon, Buttered Vegetables, Hash Browns, Baked Beans, Breakfast Tomatoes



Filipino Section - Lucban Longanisa, Pork Tocino, Beef Tapa, Steamed Okra with Bagoong, Fried Danggit, Hotdogs



Cereals - Special K Cereals, Corn Flakes, Granola



Fresh Fruit Slices - Watermelon, Pineapple, Papaya, Melon, Grapes



Japanese Section - Assorted Maki, Wakame Salad



Cold Section - Plain Yogurt, Flavored Yogurt, Bircher Muesli



Cold Section - Premixed Garden Salad, Caesar Salad
