Red Spice is the in-house Chinese restaurant of the newly opened Okada Manila. It features regional Chinese and Cantonese cuisines with an extensive selection dim sum, hand-pulled noodle dishes, roasted duck and other classic Chinese dishes.

Headed by Hong Kong Chef Chung Wai Lau, Red Spice serves some of the best and authentic tasting dim sums in Manila. Their Steamed Pork Dumpling with Shrimp (siumai) are served in generous sizes, very plump and chunky.

The Steamed Shrimp Dumpling (har gow) are likewise huge with juicy shrimps encased in translucent yet firm dumpling wrappers expertly pleated by the restaurant's dim sum chefs.

To keep our tummies warm, we ordered the Braised Fungus and Bamboo Pith Soup with Goji Berries. It has a delicate earthy flavor with silky consistency.

One of the items recommended on the menu was the Crispy Roasted Pork Belly (siu yuk). The skin was super crispy and flavorful while the meat was very tender. The fat in between would just melt in your mouth as you chew on a piece of the roasted pork belly.

We also sampled some of the main dishes from the menu, starting off with the Sweet and Sour Chicken with Pineapple. Chunks of chicken were coated with a crunchy breading and is cooked in sweet and sour sauce. Pieces of pineapples and slices of bell peppers were added for more color and texture.

Another main dish we tried was the Mapo Tofu with Minced Pork in Sichuan Chili Bean Sauce. I loved the contrast of textures and colors of this dish. The soft tofu goes well with the bits of minced pork while the lightly savory and spicy sauce added a contrast of taste to the light flavor of the tofu.

All the dishes we ordered went well with the Yang Chow Fried Rice served with generous amount of minced pork, shrimps and various vegetables.

Finally, we had Chilled Mango, Pomelo and Sago with Cream for dessert. I like the well balanced creaminess and sweetness from the mango, while bits of pomelo added texture to the dessert. I also like it that they added some slices of mango.

Red Spice is open 24 hours with all items on the menu available at any time of the day (or night). So if you feel like having Cantonese cuisine for breakfast or feasting on dim sum in the middle of the night, Red Spice is one of your best options in Manila.
