Meet Chef Roslan Adnan, the Chef de Cuisine of Tepi Laut Makan Street at Shangri-La's Rasa Ria Resort & Spa, Kota Kinabalu. During my visit at the resort, I met Chef Roslan and his strong passion for Malaysian cuisine intrigued my curiosity to try some of his signature Malay dishes.

Bawang Bukit Ikan Masin | Tepi Laut Makan Street |
The first dish we tried was the Bawang Bukit Ikan Masin, a simple yet delicious dish made with wild spring onion, torch ginger, onion, garlic, salted fish and red chili. There's a beautiful balance of aromatic flavors and natural sweetness from the fresh vegetables and the delicate saltiness from the dried fish. It has a broth that went went well with streamed rice.

Inche Kabin | Tepi Laut Makan Street |
The next dish is Inche Kabin, or also known as Nyonya Style Fried Chicken. The chicken pieces were marinated in garlic juice, ginger juice, mix spices, chili paste and coconut milk, and are then fried until the marinade caramelizes, giving the chicken a dark brown coating. It's what I consider a Malaysian comfort food that everyone can enjoy.

Udang Lemak Rebung | Tepi Laut Makan Street |
Udang Lemak Rebung is another classic Malaysian dish made of prawns and bamboo shoots cooked in coconut milk with turmeric, wild spring onion and red chili. The prawns were plump and juicy while the bamboo shoots had a contrasting crunchy texture. All the flavors of the dish were concentrated in the yellow broth which I recommend pouring over your steamed rice.

Ikan Bakar Sambal Kelapa | Tepi Laut Makan Street |
Chef Roslan then served this fish dish called Ikan Bakar Sambal Kelapa, which is basically a grilled fresh water fish topped with sambal kelapa, a condiment made of grated young coconut mixed with dry chili, tamarind juice, palm sugar and onion. The beautiful flavors of the sambal kelapa were infused into the fish making it very moist and flavorful. This dish also goes well with steamed rice.

Dendeng Berlado | Tepi Laut Makan Street |
Finally, we also got to try Dendeng Berlado, a dish made of thinly sliced tenderloin beef seasoned with mixed spices and fried with pureed red chili, green chili, lime juice and onion. The sauce is reduced until the natural sugar content caramelized. It is different from rendang as this dish does not include coconut milk.
