Kusina Sea Kitchens is the all-day dining restaurant of Hilton Manila. The restaurant serves both a la carte and buffet dining, with a strong focus on fresh seafood served in the Filipino dampa-style setting. Kusina Sea Kitchens also offers a variety of Asian and Western dishes.
Dampa-style Dining is a popular way in the Philippines to enjoy fresh seafood dishes. It adopts the market-to-table concept wherein fresh seafood is sold and cooked by the same vendor. Cooking methods are rather simple ranging from grilling, stir-frying boiling and steaming, ensuring that guests enjoy the fresh and natural flavors of the seafood.
The dampa-style dining concept is then interpreted by Hilton Manila in a buffet setting wherein guests can choose from a variety of fresh seafood and have them cooked to their preference at the live cooking station of the restaurant.
Kusina Sea Kitchens also has a Filipino themed interior featuring locally hand-woven fabrics as well as intricate Filipino woodwork used as ornamental railings of stairs, dividers and backrest of wooden chairs.
Kusina Sea Kitchens in open daily for buffet breakfast, buffet lunch and buffet dinner. The restaurant also has an ala carte menu featuring Filipino and and international dishes.

The smaller private dining space can accommodate up to ten persons and is perfect for families or groups of friends.
