Chynna Restaurant at Hilton Kuala Lumpur

Chynna is the premier Chinese restaurant of Hilton Kuala Lumpur. The restaurant specializes in modern Cantonese and Shanghainese cuisines. Responsible for Chynna's award-winning dishes is Chef Lam Hock Hin, the Executive Chinese Chef of Hilton Kuala Lumpur.

I first met Chef Lam back in May when he visited Manila for a special dining promotion at Hilton Manila when I was able to sample some of is signature dishes. It was very timely because just a week after, I was scheduled to travel to Kuala Lumpur.

Fast forward to June 2019, I traveled to Kuala Lumpur to celebrate Hari Raya and this time, I decided to stay at Hilton Kuala Lumpur. During my stay, I was able to squeeze into my schedule lunch at Chynna. The restaurant has the classic Chinese design filled with the auspicious colors of red and gold. Chynna, in particular, has a Tang-dynasty inspired interior design.

Chynna has a spacious main dining area with tables which can accommodate groups of two to eight persons. Private dining rooms are also available for exclusive events and celebrations. Like most hotel-based Chinese restaurants in Kuala Lumpur, Chynna is a non-pork restaurant.



Guests dining at Chynna are welcomed with an Eight Treasures Tea served by a tea master using a kettle with a meter-long spout. The tea tasted floral and fruity, with well-balanced bitterness and sweetness.



Since I was dining alone that day, I opted to have dim sum for lunch. I first ordered the Chicken Shao Mai (chicken shumai) which is topped with scallop and fish roe. It was surprisingly moist and tender. The taste is very close to traditional shao mai but this one is not greasy. The chicken flavor is not overpowering and blends well with the taste of the scallops.



I then ordered the Steamed Australian Scallop and Shrimp Dumplings which are generously filled with plump shrimps and topped with scallop and fish roe. I could taste the natural sweetness of the shrimps, a reassuring sign that Chynna uses the freshest seafood in their dishes. I skipped the chili paste this time and enjoyed the natural taste of the dumplings.



I made sure I order my favorite dish by Chef Lam, the Butter Milk Prawn with Egg Flakes and Scented Curry Leaves. This time, I had all four pieces to myself. The prawns were coated in a crunchy batter and coated with the rich creamy and buttery dressing. This is definitely a must-try!



The last item I ordered ware the Steamed Charcoal Buns with Egg Yolk Custard. I was already full at this point, but the sweet and salty custard filling was so addicting that I couldn't stop eating these steamed buns. I particularly loved the custard for its coarse texture which meant that it was loaded with salted egg yolk.

Overall, I was super satisfied with my experience here at Chynna. The high quality of the food was definitely the strength of the restaurant. It is no surprise that Chynna is very popular among the locals, and the many awards it received are proof to its excellence. Congratulation to Chef Lam for the achievements and continued success of Chynna Restaurant.
